Chicken: Creamy Chicken Chowder - Brenda

Chicken/Fish
(haven't tried this, but sounds yummy)

1 lb skinless, bonelss chicken breasts, cut into 1/2 inch pieces (I'm sure you could use cheaper pieces, if you want)
1 -- 11oz can whole kernal corn with sweet peppers, drained (or equivalent of frozen)
1 4oz can diced green chile peppers
2 tbsp fresh cilantro (or couple of tsp dried)
1 1.25 oz envelope taco seasoning (I would use my bulk stuff from Costco)
3 cups chicken broth
1 8oz carton sour cream
1/2 of an 8 oz package cheese spread with jalapeno peppers, cubed (I would just use some regular cheddar... Michael doesn't like food that spicy)

In a 3.5-4 qt crockpot, combine everything except sour cream and cheese. Cook on low for 4-6 hours or on high 2-3 hours.

Stir about 1 cup of hot soup into the sour cream... stir sour cream mixture and cheese into the mixture in crockpot; cover and let stand 5 min. Stir with a whisk until combined.
