Chicken: Chicken Fried Rice - Kathy

Chicken/FishWe make fried rice often but I don't really have a recipe. I simply sautee cooked rice and add whatever meat I have on hand (usually chicken or ham), onions (green or regular - if using regular I sautee them first so they are not crunchy), a few cooked veggies for color if I have/want them (peas and/or carrots) and scrambled eggs. Then I add soy sauce. One of our favoite meals served with egg rolls from Sam's or crab rangoon.
