Chicken/Fish | My family LOVES these! Two make a good meal with a side dish, but some of us eat more than two. :blush Cook up several chicken breasts (you can use whole chix, no biggie, we just use white meat is all) Jar of Salsa Can(s) of enchilada sauce Shredded cheese - I use cheddar, but can use Mexi-mix or whatever you like Chopped (minced) veggies can include: Chili peppers (I use canned green chilis) Bell Peppers Onions Mushrooms Black Olives Tomatoes Garlic Whatever else you think you'd like! Sweet corn? Pintos? Go for it! Tortillas
You can boil, bake, grill, or crock the chicken. Shred it with a fork
when done. Add the sauces and veggies, mix well. It should be kind of
moist. Spoon some across one side of tortilla (just a couple
spoonsful), then add cheese next to/on top of it. Not too much, though,
or it will ooze out. :lol Roll tortilla tightly around
filling. Pack into GREASED baking dish. Tightly! That way they don't
unroll. Pour some more enchilada sauce over the top of the rolls, cover
and bake until heated through (350* is fine). Uncover, top with cheese,
and bake just until melted. Serve! They will be HOT so be careful!
