Chicken/Fish | 3 Lb (or more) B/S Chicken breasts 1 -2 sticks butter, melted 1 -2 sleeves of crushed/ground/pulverized Ritz crackers Italian seasonings (basil, oregano, thyme, etc.) 1 -4 cloves Finely minced or pressed garlic (or more if you REALLY like garlic) 1/4 Cup grated Parmesan cheese (or more if you like) Ground black pepper
Mix the cracker crumbs, seasonings, garlic, and parmesan. I cut the
chicken into strips to stretch it, but you can leave them whole if you
like. Dip each piece into melted butter, then coat with cracker crumbs.
Place on ungreased baking sheet. If there is still butter left, I
drizzle it over each piece of chicken, then press any extra crumbs on
top. Bake at 350* for about 15-20 min. for strips, up to 35 min. for whole breasts.
These come out juicy and delicious every time! My family LOVES it when
I make this, they think I *slave* over it! It's always a special meal.
