| 1/2 Cup raisins (optional if you don't like raisins!) 2 Cup grated unpeeled zucchini 2 eggs 3 Tbl olive oil or unsalted butter, softened 1/4 Cup honey 1 Tsp vanilla 1 1/2 Cup whole wheat pastry flour 1/4 Cup soy flour (or add more ww pastry flour) 1/4 Cup oatmeal 2 Tbl wheat germ 2 Tbs. wheat bran 2 Tsp baking powder 1 Tsp baking soda 1 Tsp cinnamon 1/2 Cup chopped walnuts or pecans
Combine raisins and grated zucchini. Set aside. Blend together eggs,
oil/butter, honey and vanilla. Add zucchini-raisin mixture. In another
bowl, mix dry ingredients. Add dry ingredients to wet mixture and blend
together only until moistened. Stir in nuts. Bake for 20 minutes at
400. Makes 12 large muffins
