Muffins: Wheat Germ Muffins - Kim MI

Please note, tihs is not mine (Kim's) so the "I" in the notes isn't me. These were posted to me in response to a muffin recipe I had that had too much sugar. They're all from the Real Foods Digest ...

In a large bowl, mix together:
2 Cup milk
2 beaten eggs
6 Tbs. honey
6 Tbs. olive oil
2 Cup wheat germ

In a separate bowl, stir together:
2 Cup whole wheat flour [Prairie Gold or else kamut or ww pastry flour]
1 Tsp salt
2 1/2 Tbs. baking powder

Add flour mixture to wheat germ mixture and stir
to mix well. Fill oiled muffin cups 3/4 full with
batter and bake in preheated 350 oven for 10-12
minutes.

I like using the large muffin pans (are they called
Jumbo??) and this recipe will make 11 large muffins.
I like using a 1/2 cup measuring cup to put the batter
in the muffin pans.

These are tender and moist.
