Please note, this is not mine (Kim's) so the "I" in the notes isn't me. These were posted to me in response to a muffin recipe I had that had too much sugar. They're all from the Real Foods Digest ...

2 Cup whole wheat pastry flour or kamut flour
1/2 Cup wheat germ
2 Tsp baking powder
1 Tsp baking soda
3 eggs
1/4 Cup olive oil
1/4 Cup applesauce
1 6 Oz can pineapple juice concentrate
1/4 to 1/2 cup water
1 Cup fresh or frozen blueberries


Prepare large muffin tins. Mix dry ingredients
together in a large bowl. In separate bowl,
beat together all remaining ingredients except blueberries.
Add liquid ingredients to flour mixture and mix until
moistened but don't overmix. Fold in blueberries. Pour into

prepared muffin tins. Bake at 350 degrees for 20 minutes.
Makes about 9 large muffins.
