2 cups flour 2 tsp baking powder 1 tsp cinnamon 1/2 tsp salt 1/4 tsp ginger 1/4 tsp nutmeg 1/8 tsp cloves (I omit this and the nutmeg... don't like either of them) 1/4 cup softened butter 1/2 cup suger 1 egg 1 cup canned pumpkin 1/2 cup evaporated milk 1/4 oil Heat
oven to 375. In a med bowl, mix together flour, bkg powder, cinnamon,
salt, ginger, nutmeg, and cloves. In another large bowl, beat together
the butter and sugar until they are creamy. Add the egg, pumpkin, evap.
milk, and oil. Beat on high speed until the mixture is light and
fluffy. Add the flour mixture and stir just until the dry ingredients
are moistened. Pour into the greased muffin tins. Bake for 25-30 min.
or until a tester comes out clean. Makes one dozen muffins. I always double this, since I never buy a 1 cup can of pumpkin.
