Muffins: Pumpkin Muffins - Julie PA

Bread

2 eggs
3 Tbs. honey
3 Tbs. olive oil
1 Tbs. molasses
1 Cup mashed pumpkin
1 Cup whole wheat pastry flour
2 Tbs. wheat germ
2 Tbs. oat bran
2 Tsp baking powder
1 Tsp baking soda
2 Tsp cinnamon
1/4 Tsp nutmeg
1/4 Tsp ground cloves
1/2 Cup plumped raisins or coconut, or chopped nuts
Cheese Topping: (optional, but yummy! :) )
1/4 Cup cottage cheese
4 Tbs. cream cheese
2 Tbs. honey
1/2 Tsp vanilla
1/2 Tsp lemon juice

Blend together topping ingredients in blender or processor until smooth.

To make the muffins, blend together eggs, honey, oil, molasses, and pumpkin. In separate bowl, mix dry ingredients and stir in raisins. Mix together pumpkin mixture and dry ingredients. Put a Tbs. of batter in each muffing cup, then add a tsp. of topping. Top with remaining batter. Bake 20 -25 minutes at 400. Cool on wire rack, then frost with remaining topping and garnish with coconut or chopped nuts.
Makes 12 muffins.
