| 2 eggs 3 TBS. unsalted butter, softened 1/4 Cup maple syrup 1/2 Cup milk 1/2 Cup whole wheat pastry flour 1/4 Cup wheat germ 1/4 Cup oat bran 2 Tsp baking powder 1 Tsp baking soda 1/2 Cup chopped walnuts Mix together eggs, butter, syrup and milk. In
another bowl combine flour, wheat germ, bran, baking powder and baking
soda. Mix wet and dry ingredients together, then stir in nuts. Bake at
350 for 20-25 minutes. Makes 12 muffins. Variation--Honey-Sunny Muffins Substitute honey for maple syrup and toasted sunflower seeds for nuts.... .my dc love these! |
