Muffins: Leftover Oatmeal Muffins - Julieschel

Bread
1 Cup flour
1 Cup br sugar, packed
1 Tsp baking powder
1 Tsp baking soda
1/2 Cup oil
2 eggs
1 Cup leftover oatmeal
1 Cup raisins (optional)
1 Tsp vanilla

In one bowl, combine flour, sugar, baking powder and baking soda. In a second bowl, combine the rest of the ingredients. Add wet ingredients to dry, and stir just enough to moisten the dry ingredients (batter will be thin and lumpy.) Pour into 12 muffin cups. Bake at 350 F for 18-20 min.
