Muffins: Cornmeal Pound Cake Muffins - Kathy

This is the latest craze at our house


1 Cup flour
1/4 Tsp salt
1/8 Tsp baking powder
3/4 Cup unsalted butter*
1 1/4 Cup sugar
3 large eggs
1 Tsp vanilla
1/2 Cup yellow cornmeal

Heat oven - 350.
Grease muffin pan (or a 4-5 cup loaf pan - dust with cornmeal)
Sift flour, salt and baking powder.
In large bowl cream butter at medium speed.
Add sugar - beat until fluffy.
Add eggs, one at a time, beating well after each addition.
Add the vanilla.
Add flour mixture.
Stir in the cornmeal until well blended.
Pour into muffin tins and bake about 20 minutes (@ 60 minutes for loaf).
Test for doneness with toothpick.
Remove from oven and cool in pan about 10 minutes.

*We use tub margarine and it works fine.

As muffins these are great warm - as a loaf you'll need to invert onto rack and cool before slicing. Great with butter but certainly not low fat!
