Muffins: Cappucino Muffins

Bread
2 cups flour
3/4 cup sugar
2 1/2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1 cup milk
2 Tbsp. instant coffee granules
1/2 cup butter or marg. melted
1 egg
1 tsp. vanilla
3/4 cup miniature semi-sweet choco chips

In bowl combine flour, sugar, baking powder, cinn. and salt. In another bowl, stir milk and coffee granules until coffee is dissolved. Add butter, egg, and vanilla. Stir into dry ings.just until moistened. Fold in choco. chips. Fill greased muffins tins 2/3 full. Bake at 375 for 17-20 mins. or until they test done. Cool 5 mins. before removeing from pans. Spread with espresso spread if you want.

Espresso Spread:
4 oz. cream cheese cubed
1 Tbsp. sugar
1/2 tsp. instant coffee granules
1/2 tsp. vanilla
1/4 cup mini choco chips

In a food processor or blender, combine spread ings. cover and process until well blended. Cover and refridgerate until ready to serve.
