Blender Banana Muffins
Amount 10-12 Muffins
Bake 350* for 20 Minutes
1. Preheat oven. Grease or spray muffin pan.
2. Place in blender: blend at high speed 3-5 minutes until
smooth:
1/2 cup buttermilk or non dairy alternative
1 large banana, broken into 4ths
1 large egg or alternative
1/3 c. honey (warmed in microwave 20 seconds)
1 1/3 c. whole wheat pastry grain or other grain
alternative
3. Mix in thoroughly, but briefly, using blender and/or
rubber spatula, as needed:
1/2 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. baking soda
1 1/2 tsp. baking powder
4. Optional- Fold in with rubber spatula:
1/2 c. chopped walnuts
Mixing tip: You may have difficulty blending walnuts evenly
into the batter clear to the bottom of the blender. If desired,
fold in half the nuts. After pouring first half of batter into
muffin cups, fold remaining nuts into remaining batter in blender.

5. Evenly fill muffin cups almost full. Fill any empty cups
half full of water. Bake 20 minutes at 350*. Cool muffins in
pan for 3-5 minutes for easy removal.

Grain Alternatives:
1 1/8 c. barley grain
1 1/2 c. Kamut grain
1 1/3 c. spelt grain
