Muffins: Banana Date Oat Muffins - Kim MI




Our Recipes

Bread
1 1/2 Cups rolled oats
1 Cup milk (I used vanilla rice milk when I made these the second time)
1/2 Cup canola oil (I use cold pressed olive)
1/2 Cup honey
2 large eggs
1/2 Cup mashed banana (1 medium banana)
1 Cup whole wheat pastry flour
1 Cup unbleached flour (I used 2 cups freshly ground kamut flour)
1 Tbl baking powder
1/2 Tsp salt
1 Cup chopped dates

Preheat the oven to 400 degrees. Grease a 12 cup muffin tin. (I actually got 12 regular muffins and 12 mini muffins out of this recipe...my muffin cups must be smaller than her's)

Stir the oats into the milk in a medium size bowl, and let them soak for 10 minutes. Stir in the oil, honey, eggs, and mashed banana, mixing well.

In another bowl, stir together the flours, baking powder, and salt.

Pour the wet ingredients into the dry, stirring just until combined. Fold in the dates.

Spoon the batter into the prepared muffin cups, and bake for 18-20 minutes, until goden. Let the muffins cool for a few minutes before removing them from the pan.
