Crackers: Cheese Wheat Thins - Caroline

| by Karey Swan Hearth and Home 2 Cup flour (pastry and spelt makes a good sweet cracker to go with Papa's spicy chili) 1/4 Tsp baking soda 1 Tbl brown sugar-optional-not necessary if using spelt or pastry flour 1/2 Cup butter-softened 1/3 Cup milk 1 Tbl cider vinegar 1/2 grated cheddar cheese Mix milk and vinegar in glass measuring cup and set aside. Combine the rest of the ingredients until they resemble course meal. Add milk mixture Turn out on counter to knead until soft and workableabout 2 minutes Roll out thin onto cookie sheets and cut with pizza cutter (sprinkle with salt if desired) Bake Makes 2 cookie sheets (we havent had any leftover to store in an airtight container!)
