Bread
| 1/2 Cup honey - 2 eggs 1 Teaspoon salt 1 C. flour (try freshly ground 2 Cups yellow cornmeal (freshly ground Popcorn 1 Tablespoon baking powder 1 Tablespoon butter, melted 1 1/2 Cup milk or buttermilk (I use rice milk) Beat eggs together then beat in honey. Sift flour, cornmeal, baking powder, and salt together. Stir into egg mixture with melted butter and milk. Stir just until all ingredients are well-mixed. Spread into oiled or buttered 11.5 X 7.5 X 1 inch pan (original poster uses a lightly oiled iron skillet).. Bake at 400 degrees for 25-30 minutes. Serve hot, with extra honey to drizzle!
I make mine with whole wheat pastry flour, and have used both store
cornmeal and ground popcorn :) , and use ground flax instead of the
eggs & butter ... and use rice milk. But I have made it with eggs
and butter, too,it's good both ways.
