I like my cornbread really sweet...so I adapted a recipe...

1 1/2 Cup cornmeal
2 Cup flour
1 Cup sugar
2 Tbl baking powder
1 1/2 Tsp salt
2 Cup milk
2 eggs, well beaten
4 Tbl shortening, I use butter & often a T or so More

This makes a LARGE 9X13 pan or several cast iron pans which is my preference...I melt the butter in the oven in the cast iron skillets then add it to the batter and pour the batter back into the hot pans. This makes the crust slightly crispy while the cornbread is really moist and sweet. Almost more like cake. We often have it for breakfast.

Mix together...cornmeal, flour, sugar, baking powder, salt

Add...milk, eggs, shortening

(I obviosly do not have to butter my pan as I have already melted the butter in it, I guess if you didnt do that you should grease your pans)

Bake at 375 for 20-30 minutes.
