I hope this can help someone....we do have a Bosch mixer so we don't knead by hand...but here it is...

4 Cup HOT tap water
3/4cup olive oil
3/4 Cup honey
1 Tbl salt
6 Cup Soft White Wheat
6-7 Cups Hard Red Wheat
1 Tbl Vital Wheat Gluten
1 Tbl lecithin
2 1/2 Tbl SAF yeast

Let it knead for 15 minutes
Form loaves, put in pans, let rise 30 min. meanwhile preheat oven to 325*
Bake for 30 min.

We use this bread for everything....including sandwiches, it's not too heavy or gummy for that.

David also makes cinnamon raisin this way too.
