Bread

3 C fresh ground white wheat
2 - 2 1/4 C cool water
2 -3 t. yeast
3 eggs
3 Tbl olive oil
1 /8-1/4 C honey
2 Tsp salt
2 2 vit C tabs or 1t vit C granules, Crushed
4 1/2 Cup fresh ground white wheat

Early AM (approx. 7AM)
mix 3 c. fresh ground white wheat, 2- 2 1/4 c. cool water, 2-3 t. yeast in a large bowl and set aside (I put it in my laundry area)

approx. 10AM
stir down sponge, put in Bosche (mixer), add 3 eggs, 3T olive oil, 1/8- 1/4 c. honey, 2t. salt, 2 crushed vit c tablets or 1t vit c granules begin mixing......slowly add flour I add approx. 4 1/2 c fresh ground white wheat (more or less depending on the humidity range seems to be 4- 6), I usually add 2-2 1/2 c first then a 1/2c at a time....knead about 10min in the Bosche, turn out and knead by hand 2-3 min... adding a bit of flour if needed.


cut in half and cut a small portion off each (this recipe seems to make 2 1/2 loaves or 2 reg and 1 mini loaf... what I do depends on what I make), roll out with a rolling pin, then roll up to form a loaf, place in pan sprayed with olive oil spray, set aside to rise.... 1 1/2-3hrs depending on the warmth of the day and the humidty.


About 1PM..... bake at 325 until browned on top and sounds hollow when tapped...about 25-30 min

remove from oven, turn out on towel, brush lightly with butter, cover with towel....until cool.


I usually make 2 batches of this... I do 2 as regular bread, 2 raisin or craisin, and 2 mini loaves... or 2 regular, 1 raisin, and 1 batch of cinn rolls......

I make bread twice a week usually. But normally a double batch once and a single batch once....
