4c all purpose flour
3T sugar
1T baking pwd
1t salt
3/4t baking soda
6T butter
1 1/2c dark seedless raisins
1T caraway seed
2 eggs
1 1/2 c buttermilk

preheat oven to 350*. Grease well a 2 qt round casserole (I've used a cookie sheet). In lg bowl w/ fork mix flour and next 4 ingredients. w/ pastry blender or 2 knives cut in butter until mixture resembles coarse crumbs. stir in raisins and caraway seed. In small bowl w/ fork beat eggs slightly; remove 1T and reserve. Stir buttermilk into remaining egg. Stire into flour mixture just until flour is mo istened (dough will be sticky - often far to sticky.. I'd go easy on the milk.. not add it all at once just gradually until it's a sticky dough) turn dough onto well floured surface. w/ floured hands, knead about 10 strokes to mix thoroughly. Shape dough into ball. w/ sharp knife cut a 4 inch cross about 1/4 inch deep. Brush dough with reserved egg. Bake about 1 hr 20 min. or until toothpick comes out clean. Cool in casserole on wire rack 10 min. remove from casserole and cool completely on rack. makes 1 loaf.
