Well, I believe (recipe says) that it can be used w/WW...it makes a rustic, dense bread that has a hard, chewy crust. It is really super simple and easy to make. No fat in recipe. BUT~it doesnt keep well outside of the fridge, as with little sugar to 'preserve' it, it goes moldy within 3 or so days. (rarely lasts that long, here)

Hearth bread--

Into Bosch place

4 c flour
2T sugar
2T salt
2T yeast
4 C warm water

whisk w/french whisks

once well blended switch to dough hook.

Add flour until dough cleans the side of the bowl, on speed 1. Once dough incorporated, turn up bosch to 2nd speed, knead 6 minutes.

Shape into 2 or 3 loaves--round or long/oval. Place on pan liberally covered with cornmeal. Let rest for 5 minutes. Slash with knife, brush with cold water.

Place bread into COLD oven, along with pan of boiling/steaming water. THEN turn oven to 400 degrees. Bake until golden brown and sounds lightly hollow when tapped.

Non-bosche recipe-

Mix in bowl water, flour, salt, sugar, yeast. Stir in flour to make a fairly thick dough. Knead by hand 4-5 minutes, set in greased bowlk to rise until dbld. Punch down, shape, follow above directions.
