Bread: Italian Bread, Rolls And Breadsticks - Jodie

Bread
4 1/2 to 5 1/2 c AP flour
1 Tbl sugar
2 Tsp salt
2 Pkg dry yeast (approx. 4.5 t)
1 Tbl butter or margarine
cornmeal
salad oil
1 egg white



1. IN large bowl, combine 2 cups flour, sugar, salt and yeast; add butter or margarine. With mixer at low speed, gradually pour 1 3/4 c hot tap water (120*- 130*F) into dry ingredients. Increase speed to medium; beat 2 minutes, occationally scraping bowl with rubber spatula. Beat in 1/2 c flour or enough to make a thick batter; continue beating 2 minutes occationally scraping bowl. With spoon, stir in enough additional flour (about 1 3/4 c) to make a soft dough.

2. Turn dough onto lightly floured surface and knead until smooth and elastic, about 10 min. Cut dough in half. Cover with twoel; let stand 20 min. Grease large cookie sheet; sprinkle with cornmeal.

3. With lightly floured rolling pin, roll one dough half into 15" x 10" rectangle. STarting with the 15 in side, tightly roll the doubh, jelly- roll fashioni; pinch seam to seal. Repeat with remaining dough. Place loaves, seam side down, on cookie sheet; taper ends Brush loaves with salad oil; cover loosely with plastic wrap. Refrigerate 2-24 hrs.

4. When ready to bake, preheat oven to 425*F. Meanwhile remove loaves from refrigerator; uncover and let stand at room temp. 10 min. With sharp knife cut 3 or 4 diagonal slashes on top of each loaf. Bake 20 min.

5. meanwhile, in small bowl, with fork, beat egg white with 1T cold water. Remove loaves from oven and brush with with egg mixture; return to oven and bake 5 min. or until golden.

Italian Rolls

prepare as above but in
step 2 cut dough in 6 pieces.
step 3 roll each piece into 8" x 5" rectangle
step 4 let stand 10 min., bake 15 min;
step 5 brush w/ egg white and bake 5 min longer.

Italian Breadsticks
Prepare as above but in
step 2 cut dough into 16 pieces
step 3 with hands roll each piece into a 12 inch long stick
step 4 bake 10 min
step 5 brush with egg white and sprinkle with poppy seeds or sesame seeds. bake 5 min. longer.

With my KA mixer - I skip lots of the first part.. I dump in about 5 cups of flour and everything else all together.. let the mixer mix with he dough hook.. do the kneading... probably about 10 min. total.. to account for mixing and kneading.. and then procede to step 3.
