Bars: Pumpkin Bars - Whitney

Pumpkin Bars
2 cups all purpose flour
1 1/2 cups sugar
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cloves
4 beaten eggs
2 cups pumpkin pulp
1 cup cooking oil

Preheat oven to 350F. Combine all dry ingredients. Stir in eggs, pumpkin, and oil till mixed well. Spread batter into a greased 15x10x1 inch pan (I used a 9X13 and it was great--more cake than bar but that was fine with me. I didn't have the larger pan.)

Bake for 25-30 minutes or until the center tests done with a knife.

Frost with cream cheese frosting.

Cream Cheese Frosting
1 8oz pkg cream cheese
1/2 cup softened butter
2 teaspoons vanilla
approx. 4 1/2 cups powdered sugar

Beat together cream cheese, butter and vanilla. Gradually add 2 cups powdered sugar, beating well. Gradually beat in enough powder to make frosting a spreadable consistency. Store in refrigerator.
