Gift Idea

2 Lb hamburger
1 C water
2 T Mortons Tender Quick
1 t garlic powder
1 t onion powder
2 t pepper
2 t liquid smoke

Mix ingredients together. Divide into 3 equal portions. Roll into logs. Wrap logs in foil. Refrigerate for 24 hours. Bake at 325* for 1.5 hours. Prick bottom of foil with a fork about every 2 inches before baking. It also helps to bake it in a pan with a rack in the bottom, so it is not sitting in the grease that drains out while it is cooking.

Can be enjoyed hot, or refrigerated and eaten cold. DH can never resist tasting it hot, but I like it best after it has cooled again. :D If heartburn is a problem, have the medicine handy....you might need it. Being pregnant, I have heartburn problems right now, and this gives me heartburn....but so does about everything else. :\

I wanted to add that this is VERY good. It's not QUITE the same as store-bought, but very close. We were amazed that it doesn't taste like hamburger in taste/texture at all when it is done.

If you wanted to give this as a gift, you could cook it, refrigerate it, and then re-wrap it in clean tin-foil. It does have to be refrigerated, however, and does not have the shelf-life that store-bought summer sausage has. So, you would need to explain that to whomever you gave it to.
