Preheat oven to 375°. Cook 4 oz noodles and drain. While they are
cooking, stir 1T apple cider vinegar or lemon juice into 1C milk to
sour it. After your noodles are done, combine the soured milk, 1C cubed
cooked ham, 2 lightly beaten eggs, 1/2t salt, 1/4t pepper, 1C shredded
cheddar cheese and noodles. Add 1T minced onion (I really prefer green
onion at this point), 1/4C chopped celery, 1/4C chopped bell pepper
(yellow is lovely!), 1C cooked green peas and mix well. Pour into a 1
1/2qt casserole. Tear up 2 slices of bread into little tiny chunks
(what else are preschoolers for?) and toss with 1T melted butter.
Sprinkle that over the top of the casserole and bake 20 minutes. Oh, it's heaven with Cream of Tomato soup and a crunchy green salad! |
