1 (1lb) London Broil 1 Pkg taco seasoning mix Cooking spray ½ Cup chopped onion 1 Tbl White vinegar 1 (4.5 oz) can chopped green chiles 1 (16 oz) can refried beans 1 Pkg large flour tortillas Optional garnishes (sour cream, guacomole, tomatoes)
1.Trim fat from meat. Rub seasoning mix over both sides of meat. Place
meat in an electric slow cooker (crock pot) coated with cooking spray.
Add onions, vinegar and green chiles. Cover with lid and cook on low
heat setting for 6-9 hours. 2.Remove meat from slow cooker,
reserving cooking liquid. Shred meat with two forks. Combine meat with
cooking liquid and stir well. 3.Warm beans and tortillas
according to package directions. Spread a layer of beans down the
middle of each tortilla. Spoon meat mixture on top of beans. Add
optional garnishes if desired. Fold burrito style. |
